If you follow my blog on a daily basis, you know that I’m a busy mom of two. Not just busy as in we do a lot of stuff, but around here we play a lot of soccer. Soccer is almost a nightly thing between practices and games and by the time we get to dinner, I’m pretty much wiped. So, I started thinking about ways I could make weeknight dinners easier.
My solution?
I love using Progresso Stew or Chili after a late night practice, especially during the fall months. I’m a stew and chili girl, despite my never ending battle with my muffin top.
Plus, it’s been getting a little chilly at practice. “Chilly” for this Florida native is anything below 70 degrees!

Ingredients:
Frozen Pie Crust* optional
Progresso Hearty Vegetable Stew with Beef
Mashed potatoes
Directions:
I can’t bring myself to eat boxed mashed potatoes because I LOVE homemade mashed potatoes.
I boil my potatoes, add salt to taste and then mash them with a little bit of butter (optional) and 1/4 cup of half and half.
I simply cut my frozen pie crust to fit the bottom of my casserole dish.
Pour some of the yummy Progresso Hearaty Vegetable Stew with Beef over it and top it with a healthy dollop or four of mashed potatoes.
Bake at 400 for approx 20 minutes until the crust is cooked and the stew warmed through.
It’s easy and I can make smaller servings at a time so it is always fresh.
