Dairy Free Rocky Road Fudge Popsicles

The other day the Scrugglets and I were visiting a friend.  The look on her face prompted me to add a new easy popsicle recipe to my collection.  The kids were all having fudgesicles as an after dinner snack…that is, all of them except Pea.  She is allergic to dairy and can’t enjoy some of treats that other kids can.

I felt so bad for her.  Fudge pops are delicious!  If given a choice, I would always snatch the fudge pop.

Of course, I prefer Rocky Road ice cream to fudge pops and she can’t have those either.  It’s a travesty.  It’s a good thing that she doesn’t know what she’s missing.

In all concern for her, and not at all because I wanted to combine two of my favorite treats, I decided to make these dairy free Rocky Road Fudge Popsicles for her.

Ingredients

sugar free instant chocolate pudding (It’s what I had on hand.  Regular instant chocolate pudding would work also.)

2 cups vanilla almond milk

a handful of sliced or slivered almonds

about 1/2 cup of marshmallows

wire wisk

popsicle molds

How I made it

First I measured out the 2 cups of almond milk and poured it in a bowl with the pudding mix.  I used the almond milk because it was something I already had out for my morning smoothie.  Pea prefers to drink vanilla soymilk or chocolate almond milk.  She’s been drinking soy since she was a few months old (I supplemented her breastfeeding with soy formula) so I try to steer her away from soy as much as I can.  There is a lot of controversy surrounding the effects of too  soy on the female reproductive system.  My motto is all things in moderation and the way she slurps down soy milk is not moderate.

Pea helped whisk the pudding.  The pudding box has a warning on it that the pudding will not set if mixed with soy milk.  Apparently, it doesn’t set with almond milk either.  Don’t worry.  You’re going to freeze it anyway.

I mixed in the marshmallows and almond slivers and used a ladle to fill the popsicle mold.

Freeze overnight or until after the 300th “Is it frozen yet?”

Next time I am going to leave out the marshmallows and the almond slivers.  I thought they were tasty but Pea prefers just the fudge pop.  I am pretty sure she still enjoyed her treat.
