It can’t just happen to me. I get a last minute invite to a barbecue (this happens a lot in a large family where everyone assumes everyone else already knows we’re getting together). Life happens and it slips my mind. Either way, I find myself scrambling at the last minute to whip up a last minute potluck dish to bring to a gathering. I love quick and easy recipes so even if it isn’t last minute I tend to collect these types of recipes.
A friend of mine gave me this EASY last minute casserole idea.
Though most people don’t consider Florida “the South.” Here in North Florida, we’re mighty close to Georgia. Casseroles and barbecues are an every weekend event. If you remember that you need to bring a dish at the last minute, this easy casserole, made with the help of Hormel Chili, is perfect!
Ingredients for this last minute potluck dish: Easy Chili Mac and Cheese
- 1 family size box of macaroni and cheese
- 1 can Hormel Chili with no beans
- 5-6 hot dogs* ( these are optional )
- Approx a cup of shredded cheese
Preheat oven to 350°
Make macaroni and cheese according to package instructions.
Slice hot dogs
Once macaroni is cooked, open can of chili and mix it in. Add hotdogs. Pour into a casserole dish.
Bake for approximate 15-20 minutes.
Remove from oven and sprinkle shredded cheese over the top of the dish.
Return to over approximately 10 minutes or until cheese is melted.
Enjoy!

The healthier version of this last minute dish
If you’ve gotten this far and you know anything at all about the Gym Craft Laundry family, you know that we rarely eat processed food. The above version is for the last minute potluck emergency.
Another way to make this dish (and the way I would normally do it) is to use chili that I already have in my freezer!
I make chili with ground turkey, sweet potatoes, and pinto beans in my Instant Pot. (I’ll take photos and share my recipe next time I make it.) We love it so I always make it enough to freeze half.
I mix it with cheese and whole wheat pasta then bake it the same way. I’ve tried several chick pea pastas and lentil pastas but haven’t found one we like yet.
