I love Mexican food. Especially the cheese, which my husband and my health conscious friend call, “the devil.” Cheese belongs on beef, ground turkey, steak, and chicken tacos in my opinion! But it is getting rather close to the summer and I hate to derail my fat loss efforts more than I already have this month.
So I am opting for my favorite fish taco and jalapeno avocado “salsa” instead.
It isn’t paleo or completely low carb because of the soft taco shells. Eh, you gotta live a little. 😉
Old El Paso has these new soft taco boats that are perfect for fish tacos.
They remind me of an old Sesame street song my sister and I used to sing to the dismay of our dad.
The fish end up in the boat! I still get a kick out of that song.
I’ve made this recipe for years. It is inspired by a recipe from the Body for Life program I tried 10 years ago. I don’t follow the exercise program anymore but I still love the way this dish has evolved.
For the salsa
1 jalapeno
1/4 red onion
2 minced cloves of garlic
1 ripe avocado, cubed
juice from one freshly squeezed lime
1 tsp cumin
Directions:
Seed jalapeno and mince the jalapeno, red onion, garlic.
Add to a bowl with the cubed avocado.
Sprinkle cumin over mixture. Juice one lime into bowl. Toss all the ingredients together and place in the refrigerator until ready to eat.
For Marinade:
3-4 fillets of Tilapia
5-6 limes
minced garlic
1 tsp cumin
1 TBL Extra Virgin Olive Oil
Directions:
Place the tilapia in a shallow dish.
Sprinkle minced garlic and a tablespoon on olive oil over the fish.
Squeeze the remaining limes over the fish.
Let marinate for 10 minutes. Flip fish and allow other side to marinate for 10 minutes.
Broil or Grill Fish until flakes with a fork. I like to grill mine on a grill pan.

Line bottom of the soft taco boat with lettuce, layer on grilled fish, add a teaspoonful of Old El Paso chopped green chilis (I love green chiles!), then spoon on the avocado salsa. Enjoy your #PublixFiesta!
