Shrimp is one of the easier seafood options to grill. It doesn’t tend to stick to the grill surface like some fish does. There is minimal preparation, and shrimp only takes a couple of minutes to completely cook through.
If you don’t look forward to cleaning the shrimp yourself, you can generally find shelled and deveined shrimp at your local fish market. This recipe calls for grilling the shrimp on skewers. Large or jumbo shrimp work best for skewers. They won’t fall off or dry out like the small and medium shrimp might.
Ideal Accompaniments
The flavor of shrimp is mild and lovely when grilled. It lends itself quite well to simple cooked white rice with a drizzle of tamari. This is a nice appetizer. To make this into a more substantial entrée meal, serve it with lightly sautéed or steamed mild vegetables, such as snow peas, scallions, carrots, and button mushrooms. Top the vegetables with a touch of sesame oil and tamari. This is a light meal with few calories and plenty of protein, fiber, and carbohydrates.
Ginger Garlic Shrimp Skewers Recipe
Ingredients:
• 1 pound large shrimp, shelled and deveined
• 3 tbsp tamari or soy sauce
• Juice of 1/2 a large lemon (use a whole lemon if small)
• 2 tbsp toasted sesame oil or vegetable oil
• 1-1/2 tsps honey
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• A pinch of salt and pepper each
• Toasted sesame seeds for garnish
• Wooden skewers that have been soaked in water for 60 minutes
Directions:
1. In a medium bowl, whisk together the soy sauce, lemon juice, oil, and honey. Then, whisk in the garlic and ginger. Add salt and pepper to taste.
2. Skewer the cleaned shrimp through the large portion and closer to the tail portion so that they form a “C”. Do six per skewer if they fit. Lay these on a cookie sheet and coat the shrimp with the liquid mixture, reserving a small amount for basting. Allow the shrimp to rest in the marinade for approximately 15 minutes.
3. Prepare your outdoor grill, preheat your stovetop grill plate, or preheat your electric grill press. All of these will work for this recipe.
4. Place the skewers on the heat and grill, turning and basting once until the shrimp is just pink and opaque. This will only take approximately 3 minutes, or less. 5. Serve with rice and a sprinkling of toasted sesame seeds over the top.
