Dehydrating to save

Americans waste a lot of food.  I waste a lot of food. (Yes, it makes me feel better to think that everybody else wastes as much as I do! ) Vegetables go bad in the fridge and used to go into the garbage but now goes into my trusty compost bucket….but still they should have been eaten.

Last night I decided to change that bad habit!  I made a dish that required celery but didn’t necessarily need the whole bag.  Knowing how this story normally ends, I didn’t bother telling myself I would use the remainder later this week.  Instead I chopped it, blanched it, and dehydrated it for later use.

Side note:  I had to google blanching because I frankly have never blanched anything in my life.  For those like me, blanching is when you toss the veggie into a pot of boiling water for three to four minutes.  To keep the celery’s color, I then put it in ice water to stop the cooking process before putting it in the dehydrator.  

Dehydrating vegetables preserves many of the nutrients for later use.  The vegetable can then be either re-hydrated by placing in water or tossed in soup or stew (which is what I plan to do with the
celery.)  

Also, instead of throwing out the bottom of the celery, I placed it cut side up in a glass bowl.  The bowl is going on the window sill and in a few days when roots and a shoot make their appearance, I plan of planting it in the garden.  I will let you know how that goes because it’s the first time I’ve done it.
