Food has been on my mind quite a bit. And I’m not talking about the Krispy Kreme “Hot Now” temptation.
I’ve been thinking about making healthy, nutritious food choices for myself and my children.
I’m still struggling to get my daughter to put on weight. My plan of action involves nutrient dense food laden with healthy fats. And when I think about healthy fats, avocados are the first food that comes to mind. These healthy avocado recipes are perfect!
Avocados are low in saturated fats (the “bad” fats!) but chock full of healthy oils.
They also are a great source of:
- Vitamin K
- Vitamin C
- Folate
- Potassium
- Vitamin B5
- Vitamin B6
- Vitamin E
Of the 9 carbs in an avocado, 7 of them come from dietary fiber so “don’t count” in many low carb diets programs. (I don’t follow a set diet yet. I normally follow the If it fits your macros (IIFYM) method of eating but am going to try the 21 day fix meal portions plan.)
I not only love the creaminess of the avocado fruit, I love that it helps my body recover faster from strenuous workouts.
I’m still working on convincing my children to eat it. Their main experience with avocado comes from watching me eat it in dessert form. I love to mix avocado with sugar (or truvia or honey) and milk. I chop up the avocado with a spoon and mush it up with the milk and sugar. They think it looks “yucky.” I think it’s so yummy that I don’t care how it looks!
Hopefully, some of these beautiful dishes tempts them to give it a chance.
